My passion for cooking and delighting customers with delectable dishes.

Eggrolls. The versatility of eggrolls allows for endless creativity, with popular varieties like Philly steak and sloppy joe. We also serve smash burgers and more.

Is all the food prepared on the truck, or do you use a home kitchen or other facility?

Everything is made right on the truck. I often find myself rolling eggrolls at events, as there’s nothing quite like a fresh, homemade eggroll.

What’s the highlight of being a food truck operator?

Travelling to various events, especially during the festive season in autumn.

What’s the most challenging aspect of running a food truck?

The dishwashing.

What insights have you gained since launching the truck?

Expect that not every event will be a hit, and plan accordingly to safeguard your aspirations.

If you could go back, what would you change about the initial phase?

I would have opted for a truck equipped with air conditioning from the start. Our first truck was tiny and sweltering during the summer, nearly pushing me to the brink of quitting.

Exercise patience, as the initial year or two can be tough, but things improve over time.

Any noteworthy experiences or special events from operating a food truck?

Our time at Dade City Farms was enchanting, and setting up at Pioneer Museum was a fantastic experience due to their excellent organization.
